This is the India Pale Ale that went to India. Goldings hops and pale malt made a pale, hoppy and spicy bitter ale. We then matured this original recipe in oak hogsheads for five months, moving it in and out of the warm store to simulate the motion and temperature changes of the voyage to India. Maturation in the wood has added colour and mellowed the hops. Modern thought assumes that IPA should be bitter. Our experiment has showed that the hop bitterness diminishes and more complex, subtle oak flavours add to the spice of the Goldings. Drink like an old fashioned bitter. Although at 7.2% don’t overdo it.
